Today’s dinner was Hetty’s egg&salami Casserole dish. Luckily for my family it was really good. The thing about experimenting with food, finding new recipes, and trying out different combos that sounds good in your head is that it doesn’t always turn out the way you’d hoped. Sometimes you get lucky and you end up with an amazing dish and sometimes you’re not that lucky and you end up grabbing your phone and ordering pizza. This time I was lucky, and I ended up with an amazing dish, with incredible flavors of simply good combos I guess. Since the dish was such a success I thought I’d share the recipe with you.
250 g Mushrooms ( small/medium sized mushrooms.)
250 g grated cheese ( I personally used a grated cheese blend of 4 cheese, but any grated cheese works fine.)
1 Medium sized Zucchini
8 Slices of medium/large sized Salami
Tuscan spice blend
1-2 TBS Butter
10 TBS of milk
How to make Hetty’s salami&egg casserole dish;
- Start by pre-heating the oven to 400 degrees. Mix 10 eggs, 10 TBS of milk, salt, pepper, grated Parmesan in a mixing bowl. Whisk it all well together and put it aside for now.
- Peel the zucchini, and cut in quarters before slicing it up. Put some butter into a skillet and add the sliced up zucchini, season with salt, pepper, chili flakes and Tuscan spice blend. Wash and slice up the mushrooms and add them into the skillet with the zucchini when they both have reached a golden color. Spray or butter a casserole dish so the egg doesn’t stick. Add the mushrooms and the zucchini into the casserole dish, cut the salami into stripes and mix them in with the vegetables.
- Pour the egg mix over into the casserole dish, and top it all off with grated cheese before adding it into the oven for approximately 35-40 minutes.
- Chop up some fresh parsley and sprinkle it over the dish when you take it out of the oven. Serve it up warm, with bread on the side.
