I hope all of you are having a great day so far. I’ve been doing a lot of writing today, and I’ve managed to squeeze in some cooking. Today’s dinner was pork tenderloin served on a bed of sliced potatoes, grilled vegetables and be Bearnaise sauce. This is more of a Weekend dinner idea, but somehow we ended up having it on a Monday. I made a really good rub-marinade for the tenderloin. A good rub or marinade is a key element to use to get all the flavors you might want in the meat. I used a frozen vegetable mix called family favorites, and frozen sliced potatoes, and a bag of sauce mix. I know it’s a big no no to use sauce mixes and the same goes for the frozen products I used. But in this case I only used what I had laying around the kitchen. Since I only had frozen potatoes and frozen vegetable available for me today I used what I could find. I’m all for using what you have an making something good out of it. I do not under any circumstances use frozen meat. The only thing I might use that are frozen is vegetables mixes, potatoes and fish.
Say you have bacon, eggs, some spring onion and canned sliced mushrooms and some bread and maybe some cheese then make an omelette. It’s all about using your imagination, and simply take different components that you find in your kitchen cabinets or in the fridge and make something good out of it. If you want to try and use what you have laying around, left over etc or maybe you got some ground beef and some eggs or maybe you got some chicken and tomatoes, what ever it might be try to think creatively if you’re totally blank then leave a comment or contact me via e-mail, tell me what you have to work with, what ingredients you have to cook with, and preferably what spices you have to work with as well and I can help you make something good. Red chili flakes
2 cloves of minced garlic
freshly chopped parsley
Tuscan spice blend ( optional)
How to make Hetty’s garlic and chili rub – marinade:
Simply rub inn one spice at a time starting with pepper, chili-flakes, Tuscan spice blend, garlic, paprika and lat but not least rub inn the freshly chopped parsley.
It’s a super easy and simple recipe but it’s really good, I really recommend trying it. I hope you enjoy it as much as we do.
