I’m starting this week with a Tuesday post, the recent I didn’t get to write yesterday was because my aunt broke her back at the gym a few weeks ago, and we just got the news yesterday when she called. Luckily she’s not paralyzed nor will she be. But she’s in a lot of pain and needs to take it easy for a few weeks. She’s walking and driving so she’s doing ok but with all the snow and ice laying around the streets these days, it’s not that safe for her to be walking around. If she’s feeling up to it she will be joining us for the Easter holiday weekend.
I’ve been thinking all day about what to write for you guys today, after a little back and forth I’ve decided to post a recipe on the easiest salad I know of. It’s not only easy to make it’s also super tasty and delicious. You can eat it as a lunch, have it as a side dish to your dinner or you can simply serve it on a summer get-together with friends or a BBQ-party.
This dish serves about 4 people.
4 large tomatoes
200g feta cheese
How to make Hetty’s easy spring salad:
- Start by washing all the vegetables. Peel the cucumber, cut it in half before slicing it up. Add the cucumber in a serving bowl. Cut off the end of the tomato, cut it in half and slice it up and add it in with the cucumbers. Cut the feta cheese into dices and add them to the bowl.
- Pour some olive oil into a pestle and add salt, pepper, dried basil and dried oregano, use the pestle to mix it all well together before adding it to the serving bowl. Mix the dressing well together with the salad and serve it up.
