Hetty’s Spring Salmon


Hey Everyone!

It’s Wednesday, the sun is out and about, the sky is blue and it’s a perfect day for writing. I am on the other hand looking forward to the temperature to rise so I can enjoy my morning coffee outside in the backyard and write.

Today I made pan-fried salmon served with stirfry vegetables and oven roasted potatoes.  It turned out better than I first expected. Normally I put them in the oven and they’re ready in 15 minutes. But today I had the potatoes in the oven, and since I only got one stove I decided to pan-fry the salmon instead of cooking them in the oven. I got a nice crusty appearance and the new all-in-one seasoning blend for seafood I bought made wonders flavor wise.

Ingredients for Hetty’s Spring Salmon:

2 pounds of small potatoes



Tuscan spice blend

Chili flakes

Olie oil


Half a lemon

Seafood spice ( Remember to taste the spice before seasoning, to get a feeling of how much you would want to use. Most seafood blends will go with salmon. If you are unsure if your seafood blend would go with salmon simply google it. )

Fresh thyme ( I prefer using lemon thyme, but regular thyme will do as well.)

How to make Hetty’s Spring Salmon:

  1. Pre-heat the oven to 450 degrees. Wash the potatoes and cut the potatoes in half. Sprinkle some olive oil over the top and season with salt, pepper, chili flakes, fresh thyme and Tuscan seasoning blend. When the oven is ready put the potatoes in and let them cook for about 45 minutes.
  2.  Season the Salmon with the seafood seasoning blend of your choice. Cook the Salmon in some butter, 2-3 minutes on each side.
  3. When the potatoes and the salmon are ready, serve it up on a plate with a salad on the side. Sprinkle some lemon juice over the top before serving.  Serve it up with a salad on the side or a vegetable mix of your choice.

I hope you enjoy this dish as much as we did. This dish is as easy to make as it sounds like. Sometimes easy is good, and in this case, it is.
