It’s Thursday which means tomorrow it’s finally Friday. This weekend we finally got some good weather heading our way. I’m writing as much as I can to get this book finished by the summer. I’m cooking, I’m blogging and tomorrow I got a ton of errands to run as well. I even got a doctors appointment squeezed in tomorrow morning. I love how I’m keeping busy these days.
Today we got stuffed pita bread for dinner. I used a spice mix I’d never used before so truth be told I was a little worried about the result, but it actually turned out a whole lot better than I expected. Sometimes I get lucky and things turn out great, sometimes I don’t get lucky and it turns out not so great. But I’m always positive and know in my heart that If I keep trying it will get better. But this time It turned out perfectly fine. Lots of flavors, and I manage to get a good balance between the flavors.
Ingredients to make Hetty’s filled pita – spring edition:
1 pound of ground beef
Half a cucumber
8 oz of canned mushrooms
2 oz of canned corn
Hamburger dressing of your choice ( Make sure you choose the one you think will be suitable for this dish or a hamburger dressing that goes well with ground beef and vegetables.)
1 pack of old El Paso’s smokey BBQ spice mix
4 Pita ( Serves two people for dinner, if they’re very hungry, I only managed to eat one and a half for dinner.)
How to make Hetty’s filled pita bread – Spring edition;
- Put some butter into a pan, when the butter is melted add the ground beef and cook it until it’s reached a darker shade of brown without being burned. Add the seasoning mix and let it simmer for about five minutes.
- While the ground beef is cooking, start by washing the cucumber and the tomato.Cut the cucumber in half, chop it up and add it to a mixing bowl. Do the same with the tomato and add it to the bowl as well. Mix it well together, drain the canned corn and mushrooms and add them to the bowl. Mix it all well together.
- When the meat is done, add the meat and the grated cheese to the bowl and mix it well together. Add a good amount of hamburger dressing and stir it well together. When the pita bread is ready, take them out of the oven, cut the top off and start filling them up. Serve them up on a plate, you can serve it with a salad on the side if you want to. This was more than enough food alone for the two of us so we didn’t feel like having anything on the side, but if you want something on the side, a salad is perfect.
I hope you enjoy this dish as much as we did. You can easily change the ingredients, it’s all about using what you have and making something great out of it.
