Hetty’s tuna salad

Hey, everyone!

The plan was to make the perfect chicken on the go, dish. But silly me forgot to take out the chicken from the freezer and if I take it out now it won’t be de-frosted before dinner. Which means I will be making tuna salad today and chicken on the go tomorrow. This recipe has been in our family for decades, I remember when I was a kid and my mom used to make this very tuns salad for lunch in elementary school. It brig aback a lot of memories. A few weeks ago a good friend of mine came over and she talked about how she remembers this very tuna salad recipe, she remembers getting the recipe from my mom and that over the years she has made it several times. I feel honored that she once asked for the recipe, and now so many years later she’s still using it.

Ingredients you need to make Hetty’s tuna salad;

6,5 oz Canned tuna

6,5 oz Canned mushrooms

6,5 oz Canned corn

5,6 oz of mayo

1-2 inches Cucumber ( simply cut off a piece and chop it up or slice it up. it’s all about preference.)

Half a cup -1 cup Macaroni (It depends on how much macaroni you like to use.)

Salt

Pepper

Chili flakes

Garlic ( optional)

Tuscan spice blend

How to make Hetty’s tuna salad;

  1. Start by boil the macaroni as written on the label. Drain the canned mushrooms, tuna, and corn before adding them to a medium mixing bowl and mix it all well together. Cut/slice or chop up the cucumber as wanted and add it to the bowl.
  2. When the macaroni is ready, drain the water before adding it to the mixing bowl with the other ingredients. Mix it well together. season well with salt, pepper, Tuscan spice blend, 1 clove of minced garlic( optional) and chili flakes. Blend in the Mayo gently. Add the tuna salad into a serving bowl and you’re ready to serve. You can serve the salad with bread on the side or you can even use the salad as stuffing to a pita bread or a wrap, the options are endless.

I hope you enjoy this recipe as much as my family and I have over the years. For me, this brings back childhood memories and family traditions.
