Hetty’s Chicken on the go

Hey everyone!

Today I’m posting my own recipe for chicken on the go. Everybody loves taco, right? So what’s better than chicken on the go — Taco style? There is these tortilla wrap alternative called stand and stuff. I’ve always wanted to try them out but I’ve never really had an idea of what I could do with it. But when I decided I wanted to make a chicken on the go taco style dish I thought the stand and stuff wraps would be perfect. Today’s dish is not only easy to make, but it’s the perfect meal on the go. You can use it for lunch or dinner, or a mid-day snack. If I had a food truck this would definitely be on the menu.

Ingredients to make Hetty’s Chicken on the go:

200 g Sliced chicken

1 Box of canned corn ( use as much or as little as you want, you can also use fresh corn)

1 Box of canned mushrooms ( you can also use fresh mushrooms that you pre-cook in a pan.)

1 Cup grated cheese ( Use your favorite cheese. Pepper jack, cheddar. mozzarella any cheese will do.)

Sour cream

Avocado slices

Salsa Picante

Chicken spice mix. ( I used a spice mix called Tex-Mex Baja chicken spice mix, you can use fajita spice mix if you’d like. You can also make your own hot spice mix easily.)

Pepper

Directions on how to make Hetty’s chicken on the go;

  1. Put some butter or EVO into a skillet, when the butter has melted add the chicken. Season with pepper. Let it cook until it reaches a golden color.
  2. When the chicken is done, add the Chicken Baja spice mix or your fajita spice mix and let it cook for additionally 2 minutes.
  3. Heat up the stand and stuff tortillas in the microwave for about 30 seconds. When the stand and stuff tortillas are ready,  start to fill them up. Start by adding a leaf of lettuce, then add the chicken, some corn, some mushrooms, then avocados, sour cream, salsa and top it off with some of your favorite grated cheese. You now got yourself a chicken on go taco style dish. Enjoy.
