Cook with what you have

Hey, everyone!

The other day I was asked if someone could book my food truck for an event. I was honored to be asked. But sadly I don’t have a food truck so I had to gently decline. But the fact that someone actually liked my food enough to ask is amazing. I’m truly honored.

When you watch cooking shows on TV, almost all of the chefs have their own opinion on what you HAVE to have in your kitchen cabinets. Not only that but they also make it seem like they always succeed and that nothing can go wrong. When I started watching cooking shows and reading cookbooks I felt like every recipe I followed turned out tasting wired or far from good. Then the chefs on the TV said if it doesn’t taste good, or if you didn’t like it you most likely did something wrong, or you added ingredients that weren’t supposed to be there. It started to piss me off because I did everything they said, and it wasn’t good. So I decided to start a new concept, something that would be suitable for every home cook out there. Encourage people to use what they have in their cabinets. Because the chances are high that our kitchen cabinets don’t look the same. We all have our favorite spices and ingredients that we like to use. We all are different and we like different types of food. In most of my recipe, I try to let people use what they have.

It’s all about taking what you have and make something great out of it. If I’m making an omelet with veggies, sausages and you don’t have sausages or the spices I’m using you can easily switch out the sausages with slices of pork, or beef and you can use seasoning mixes that you are comfortable with, that you normally use in your cooking.  There is no limit to what you can do with food, you make the most incredible dishes with as many or as few ingredients that you want. Making a new dish from what you have laying around can be challenging but it can also be fun, and you get to use your creativity. I’ve said this before and I’m saying it again. If you need help with your cooking, if you have a list of ingredients and seasonings you can write me an e-mail and I’ll give you some ideas on what you can make with what you have. We’re not all creative and I know it’s hard to figure out what to make for dinner. I used to have the same problem, and still do sometimes. Anyway, I’m here if you need me, know that.
