Tomorrow I’m making pork tenderloin, and I’m using my own herb marinade. I love making my own glazes and marinades using herbs from my garden and EVOO. At this point, I’m not very good at making my own spice blends when it comes to dried spices, but I’m planning on getting better at it. You can literally make any spice mix yourself, but in order to do so, you need a ton of different dried spices in your cabinets. ( Something I don’t have. Well, I do have a lot of different dried spices in my spice cabinet but yet there are a ton of different spices missing in order for me to make my own spice mixes. For now, I’m sticking to pre-made seasoning blends until I can afford to buy all the dried seasonings I need to make my own seasoning blend.
As I mentioned, tomorrow I’m making my own fresh herb and EVOO marinade/glaze for the pork tenderloin I’m making for dinner tomorrow. I’m pretty excited about it. I’m going with simple side dishes to serve it with. I’m only serving it with rice and a Greek salad. I know it sounds too easy, and maybe I should make a fancy side dish to go with a good piece of meat like that. But the truth is that we’re most likely getting my aunt Liv over for dinner tomorrow and this was what I had laying around, and I haven’t been able to go to the grocery store for a while, so I had to use what I could find around the kitchen to make for our family dinner, and so I intend to do. Working with what I have is something I normally enjoy doing, but from time to time it can be a little bit boring or a little too simple. But I sometimes you don’t have a choice if you have a pork tenderloin, fresh herbs, EVOO, a cucumber, a couple of tomatoes, a piece of feta cheese, rice, salt and pepper and it so happens that you’re suddenly hosting a family dinner for your aunt. Then you have to improvise and so I’m intending on doing.
As I’ve said earlier I’m really excited about this herb marinade I’m making. I will post the recipe tomorrow and hopefully you will enjoy it as much as we do.
On Sunday I’m making milkshakes and I haven’t made milkshakes in over a decade so I’m super excited about it.
