Hey everyone!
Wednesday, happy hump day Y’all! I had a few ingredients in the fridge that had to use before the end of the week. I didn’t have a lot to go on, but I did the best with what I had and it actually turned out better than I expected. I had a pack of sliced pork tenderloin, a jar of marinade, three potatoes, and some frozen vegetables.
Ingredients:
A pound of sliced pork tenderloin
Frozen vegetables of your choice
A marinade of your choice
3 potatoes
Tuscan spice blend
All around spice mix
Salt
Pepper
Chili flakes
Butter or Evoo
How to make Hetty’s pork and mash :
- Start by marinating your pork slices in the marinade you’ve chosen. wash the potatoes, slice them sideways into medium thin slices and boil them for about 10 minutes. Remember to salt the water. Then through the frozen vegetable in a skillet with some butter or Evoo. Season with salt, pepper, Tuscan spice blend, and red chili flakes.
- When the potatoes are done, drain the water and add them into a skillet with some butter. Season with salt, all around spice blend, Tuscan spice mix, chili flakes, and pepper. use a spatula to gently push the potatoes around until you reach a mash.
- Add the marinated pork into a skillet with butter or EVOO and gently fry them until they reach a golden color and until they are a little crunchy around the edges. Be careful so you don’t burn them. When everything is done, serve it up on a plate or on a serving plate.
This was today’s take what you have and make something good kind of dish I think. I had pretty low expectations for this dish, not only because I used a marinade from a jar, but because I had literally no idea what I was doing half the time. But sometimes that is exactly when everything can turn into something great. You just have to go with your gut feeling and go from there. Sometimes it turns out great and sometimes you end up ordering pizza. This time it turned out great and I didn’t have to order pizza. Today was a good day in the kitchen and I’m proudly sharing my result with all of you.
