Hetty’s Chicken salad summer edition.

Hey everyone!

Today I’ve went to the grocery store, then I got back home, made lunch and suddenly remembered that I forgot to buy a few things so I went to my the online grocery store i often use and I ordered the rest of the groceries I needed there and lucky for me they will be deliver on my door tomorrow between 4 and 6 p.m. just in time for dinner.

Today’s recipe is what I made for lunch and it was great. Chicken salad with EVOO is today’s recipe. I normally would use the good old mayo or yoghurt or something like that, but I wanted something simple and I didn’t have any mayo so I went with the flow and ended up making an easy salad dressing out of EVOO.

Ingredients:

1 pound shredded chicken

1/2 – 1 avocado diced

1-2 tomatoes

1/2 cucumber

8 oz. Feta cheese

EVOO

Salt

Pepper

Chili flakes

Directions:

1. Put the shredded chicken in a mixing bowl. Wash the cucumber and the tomato. Cut them in half lengthwise, then slice it up and add it in with the shredded chicken.

2. Clean and cut the avocado into dices, gently mix it in with the salad. Dice up the feta cheese and gently blend it all together in the mixing bowl.

3. Season with salt, pepper and chili flakes( or your favorite salad seasoning) pour some EVOO on top before gently belonging it all well but gently together. Put the salad into a serving bowl and it’s ready to be served.

You can easily add or leave out ingredients in this dish, that’s one of the reason why I love it. You can easily add in what ever you want and it always end up tasting delicious. This recipe serves about 2-3 people. It’s easy to make and perfect as lunch on a hot summer day.
