It’s Friday, the weekend is here. This past week have gone by like a flash. I was supposed to blog about my recipe on grilled ham and cheese sandwich if my mom wasn’t feeling sick. Luckily she was feeling fine today. But the truth is that the whole grilled ham and cheese sandwich project went out of the window. Not literally but I started the day writing and then before I knew it, it was dinner time. Then I planned on making it as late night snack but then I forgot all about that when I started to plan next weeks recipes. But on the positive side I do have a new recipe for y’all today even though it’s not the planned grilled ham and cheese Sandwich. Today’s recipe is easy, tasteful and perfect as lunch on a hot summer day. Summer egg salad.
If you like eggs and you like salads than this is perfect for you.
Salad of your choice
1/2 Red bell pepper
1. Hard boiled eggs, put 3 eggs in small pot and cover them with water and add a pinch of salt. Bring to a boil on high heat. then turn down the heat to low and let it cook for about 6 minutes.
2. Wash the bell pepper and the cucumber before slicing it up. Wash the salad, and add it to a serving bowl. Add inn the bell pepper and the cucumber. Blend it well together. When the eggs are ready, peel them before slicing them up and add them in the salad. Season with salt and pepper. Pour some EVOO on top and gently mix blend the salad together before serving.
