Plum pie turned into plum cake.

Hey everyone!

It’s been a long and stressful week as y’all know. My mom is ok for now, luckily we didn’t have to go to the hospital today so that’s good news. We just take an hour at a time, cross or fingers and pray to god that everything will be ok.

In the middle of all the chaos, I decided that today I was going to make plum pie. I was determined to get this pie going, even though I’d never made a dessert pie before I felt confident that this would be easy as pie. Well, sue me, I was wrong.

The first time i tired i got all the ingredients wrong.. then I tried again and it started out ok then when I was supposed to roll out the dough I realized that what I was looking at looked far from a pie dough. I thought I could fix it and placed the rolled out pie dough into the pie dish and put it in the oven to pre-Cool like the recipe said.. it game out pale, mushy and wired. I was frustrated for a moment not knowing what to do next.

Then I got an idea, what if I used my grandmothers apple cake recipe and made sort of a plum filling. So that is what I did and even though the recipe was kinda all over the place it turned our amazing.

Ingredients:

1 Cup Flour

1 Cup Sugar

Half a cup of butter

2 Eggs

1 ts Baking powder

Plum filling:

5-10 Red plums

4 TBS Butter

1 vanilla stick

2-4 tables spoons of honey

1 Handful crushed walnuts

For sprinkling:

2 TBS of sugar

2TBS of cinnamon

A handful of walnuts

2-4 TBS Honey

Directions:

1 Preheat the oven to 400 degrees. Mix all the dry ingredients together in a medium mixing bowl. Whisk together two eggs in a small bowl. Melt the butter.

2 Add the melted butter and the whisked eggs in with the dry ingredients and gently mix it all well together with a wooden spoon.

3. Wash the plums, then cut them in half and take out the stone before slinging them up. Melt the butter for the plum filling. Cut the vanilla stick in half lengthwise. Use a small knife to scrape out the seeds and add them into the melted butter then add inn the sticks as well. Then add inn the honey and the sliced plums. Let it simmer on medium heat for about 5 minutes. ( drain any leftover liquids.)

4. Spray a 9-inch springform pan with a nonstick spray. Pour the dough cake mixture into the form. Gently mix in the plum mixture and the crushed nuts. Then mix together 2 TBS of sugar and 2 TBS of cinnamon and a handful of crushed walnuts into a cup and mix it together. Then sprinkle it over the cake before putting it into the oven for 30 minutes.
