Hetty’s Taco Tuesday

Hey everyone!

Taco Tuesday, I love Taco-Tuesday at much as anyone else. What I love about it is that you can do so much with tacos, add all your favorites into one shell or wrap. I remember growing up we had taco Friday’s and home-made pizza Saturday’s, the 90’s the good old days.

Today’s post is all about taco’s, what is your favorite taco? I actually like the good old day’s taco’s that I grew up eating. That is why I’m telling you all about my favorite taco fillings today. Remember that this is how I grew up eating taco’s and you can use your favorite ingredients when you’re making your own taco. I just thought it would be fun sharing Taco’s when we all grew up memories.

I like to use ground beef, taco seasoning and taco sauce and taco wraps or shells from Old El Passo or Santa Maria. I haven’t had the time or the money to make my own blend yet, so that’s on hold for now. I cook the ground beef, when cooked, I add the seasoning and blend it out with water as written on the label. While the ground beef is cooking I like to pre-peer everything else I’m having on my taco’s. I use canned sliced mushrooms and canned corn, then I dice up some cucumber into small dices. Cut an avocado in half, take out the stone and scoop out the avocado before dicing it up. I add some grated cheese into a bowl and open up the sour cream and the taco sauce. I then put the wraps or the shells into the oven or the microwave and heat it up. When the ground beef is cooked I add a couple of TBS of ground beef, some corn, some mushrooms, some cucumber, some diced avocado. I top it off with a couple of teaspoons of taco sauce, 2 TBS of sour cream and then sprinkle a good amount of grated cheese on top before I wrap it together.

I love putting everything out in different bowls, that way people get to choose what they want to add on their tacos, sometimes I also have diced bell pepper and red onions as well. It all depends on the day and what I’m in the mood for. It’s always fun making taco’s, it’s so easy, so good and it’s perfect for a Tuesday as well as for the weekend.

I know that everyone is making their own spice mixes these days, I’m not one of them. Not yet anyway but I’m sure I will be one day, just not yet. I feel like a lazy person but I’m not, I like to use taco spice mixes because it reminds me of my childhood which is epic and I’m very happy about that.

It’s been a rough day at our house, my mom is not doing very well, and we’re praying that she will be back to her jolly old bubbly self by the end of this week. I really hope that everything turns out good and that my mom gets well without going to the hospital, but time will show. I’m praying that she will be back on her feet by the end of the week and praying that she will be better tomorrow.
