As the leaves turn orange, and the rain comes riding in on clouds, I decided that today was the perfect day to make baked potato with tuna and grated cheese. I know, I know the idea itself can be quite wired. But it all comes quite well together flavor-wise. I was actually quite surprised that it tasted as good as it did. The thing is that I’ve post-pond this dish all week because I was afraid about how it would turn out, but now after tasting it I suddenly realized my fear was all for nothing. I had nothing to be nervous about in the first place. Most of our fears don’t come true and good is that. Sometimes our worst nightmares do come true though, but at situations like that, we just have to make the best of what is. Well, anyway today’s dish was perfect for a foggy fall evening like this and a perfect way to start the weekend as well when I think about it.
2 Baked potatoes
7 oz. Canned tuna
6 oz. Canned corn
6 oz. Canned sliced mushrooms
5 Drops freshly pressed lemon juice
- Cooked the potatoes in the microwave for about 15 minutes.
- Add the tuna into a medium mixing bowl, then drain the liquid from the canned corn and sliced mushrooms before adding them in with the tuna. mix it all well together. Season with salt, pepper, some Italian seasoning and five drops of freshly pressed lemon juice. gently blend it all together with a spoon.
- When the potato is done, take it out of the microwave and gently slice the potato in a cross. Then use a fork to loosen up the potato filling. Add in as much or as little spicy butter as you might prefer before adding the tuna filling and top it all off with some grated cheese of your choosing.
Serve it up on a plate with some extra filling on the side if wanted. I hope you enjoy this dish as much as we did. It’s a simple to make and it’s the kind of recipe that comes together using what you already have in the kitchen. You can easily switch out the tuna with something else of your choosing, depending on what you have laying around the fridge, in the kitchen cabinets, and in the freezer. You can use chicken, pulled pork or turkey, anything you might like. That’s what I love about a recipe like this, it’s so easy to change after what you prefer and after what you already have.
