Hetty’s Chicken salad

Hey everyone!

Today I mad Chicken salad for dinner, I’ve been wanting to make this dish for quite some time now, but due to the local grocery store being sold out of chicken I haven’t been able to. But this time around I got the chicken and all the other ingredients I needed in order to make my chicken salad, and I must say I was pretty psyched about it. What I really love about chicken salad is that it’s perfect for any time of the day. You can make it for lunch, for picknicks in the park, for a day on the beach, or you can make it the night before and take it with you as lunch the next day at work. I remember growing up my mom used to make chicken or tuna salad the night before and give it to me as lunch the next day at school. It’s super good, and perfect for lunch, not only that but if you’re working late and get home who-knows-when it’s a perfect dinner alternative. It’s super quick to make, it’s flavorful and it’s a win-win situation. Also, you can perfectly switch out the ingredients I use with something else you like. It’s basically all about using your favorite ingredients. I used mayo but you can easily switch that out with something healthier.

Ingredients:

8 oz. Canned sliced mushrooms. ( Can be substituted with cooked fresh sliced mushrooms )

8 oz. Canned corn ( You can use fresh corn.)

A handful or two of diced cucumber

0,5 Ibs Shredded chicken

1-3 TBS Mayo

Pepper

Salt

Italian seasoning blend

Crushed red chili flakes

10 TBS of Cooked macaroni

Directions:

  1. Add the chicken, the corn, mushrooms and the diced cucumber into a medium mixing bowl.
  2. Cook the macaroni as written on the label.
  3. Season the salad with salt, pepper, chili, and Italian seasoning blend. Add in the cooked macaroni and blend it all well together.
  4. Gently stir in the mayo, add the salad into a serving bowl and serve it up.

I love how simple this recipe is and yet it tastes so amazing. A bite of my childhood, a trip down memory lane for sure. I hope you love it as much as we do, and I’m so happy that I finally got to share this recipe with all of you.
