Taco – A Childhood Memory

Good Mornign Everyone!

It’s Taco Tuesday, what’s not to love right? Today we have such large variety and alternativs – ingrdeients wise when it comes to making tacos. We have fish tacos, beef, pork, no meat at all and the list goes on and on. But to be honest I personally love the version I grew up eating. Maybe because I’m so used to it, but also because it reminds me of a care-free time growing up in a happy home. There are so many reasons why I choose to eat my tacos like I did growing up – Good flavor and good memories are one of them.

In Today’s society we’re all about organic food, making our own spice mixes and never use this product or that product. But I’m not getting on that train, I don’t have anything against those who do, I for one don’t have the money to buy all things organic because it’s crazy expensive and other than that I love using the ingredients I can get a hold off and that isn’t that expensive. Becuse the truth is if you where to buy single grounded spices and mix t hem yourself it will coast a lot of money and that is something I don’t have, same goes for Organic products, it’s simply more expensive than non organic. If I’m to believe what I’ve heard from people trying out organic products – they do taste a little different. If that’s good news or bad news I don’t exactly know. I’m sticking to the good old cooking I grew up with and the things I can actually afford.

Growing up me and my mom would always eat taco’s on Fridays and Homemade pizza on Saturdays. We didn’t have a lot of money but we had more than enough to put food on the table, buy new toys every now and then and we always had clean clothes. We had everything we needed and more but we were far from rich. But every situation is what you make it into I beilive. We had this thing where we would always eat something a little extra tasty during the weekend, so Friday, Saturday and Sunday we would eat something that we didn’t cook during the week days. So Tacos on Fridays, Homemade pizza on Saturdays, and my grandmothers stew on sundays for an example. Family is important to me, it was then and it still is. Family dinners is a must for me, I love them.

Nex family dinner at my house will be on Thanskgiving, and I’m looking forward to it, even though I’m terrifide on the insdie because I’ve never cooked for that many people before. I’m getting at least 8 guests and I’m trying my best to prep for that in any way I possibly can.

Back to the good old taco subject. We normally chop or cut up our favorite toppings, like canned corn, canned mushrooms, chopped cucumber, chopped red onion, then we have grated cheese, sour cream, salsa and groudn beef cooked until no longer pink, then we add in the taco seasoning mix and let it simmer for a couple of minutes before serving. Sometimes we have taco shells sometimes we use tortilla wraps, it all depended and depends on which mood we’re in’ that day.

I remember one time we were having tacos at my mom’s friends house. She had two kids, one boy that where in my class in elementary school, and one older girl. We where all good friends. This time, we were having tacos for dinner, the mom had bought shells and not tortillas. The boy was a little pissed because he didn’t like the shells because they where so crunchy. So he took all the toppings on to his palte and mixed it all together and started eating it with a spoon. I remember his mom comenting on it. ” He doesn’t like shells” he said. Just one of a thousends of taco childhood memories to share.

I still eat tacos, with ground beef and a seasoning mix with the same toppings I’ve had sicne I was a kid. I love it, and don’t see the reason to change somehting I love. I’ve tried a variety of prok and beef tacos but still I always return to the way I had it as a child and there is nothing wrong with that what so ever. Childhood memories, the smell, the cooking, everything measn so much to me that I wouldn’t change it for the world!
