Anette’s Tuna Salad

Hey everyone!

Today I made my mom’s tuna salad. There are some history and a lot of good memories around this recipe. I remember growing up my mom would always come up with new and tasty recipes that we would have for dinner. This tuna salad is one of them. I remember always looking forward to dinner every day growing up. Sometimes my mom would make it for lunch as well, so I always had something to look forward to when lunchtime came around in elementary school. Problem being that all my friends loved the salad as much as I did so, in the end, I split it with my friends and barely got to eat any of it myself. One of my best friends of all time asked my mom for the recipe, and she still got it to this very day. I haven’t made this dish in a long time, and just the other day she called me up and told me she was making it, just the way my mom used to. I was so excited to hear all about it, so I decided that this week I would make it for dinner and share the recipe with all of you. Today is the day, and it turned out amazing, just as I remembered my mom make it. I wish she could be here today to taste it with me. But I know she’s looking down at me, and she’s more than well aware of her legendary tuna salad living on in her name. So let’s call this dish Anette’s tuna salad and make her name live on forever in this amazing dish.

Ingredients:

6,5 oz. Canned tuna

Canned corn

Canned mushrooms

Cucumber ( finely chopped.)

1 Clove garlic

Red onion ( finely chopped.)

Macaroni

Kosher Salt

Pepper

Red chili flakes

Mayo

NOTE: Use as mushrooms macaroni, onion, cucumber, corn, mushrooms, and mayo as you prefer. When it comes to this recipe it’s all about preference.

Directions:

  1. Boil macaroni as written on the package. Drain the tuna and add it to a mixing bowl. Drain the corn and the mushrooms and add as much or as little as you want to in with the tuna.
  2. Finely chop the cucumber and the red onion and add it to the mixing bowl. Mix it all well together. Use a garlic press to squeeze one clove of garlic into the mix. Season with salt, pepper, and red chili flakes.
  3. When the macaroni is done, drain it and add it to the mixing bowl. Mix it all well together, and add in the mayo. Stir until everything is mixed well together. Taste, add more of the seasoning if needed. Add everything into a serving bowl and it’s ready to go.

I really love how easy and yet so delicious this dish is. It’s also perfect for lunch and dinner something that makes it even better if you ask me. You can easily switch out the ingredients to your preference as well. You can use Chicken instead of tuna and there is a lot of ways you can make this into your own favorite, with your own twist.

Tomorrow I’m making ground beef burritos in the oven, and hopefully, they will turn out great. I’ve never tried the recipe I’m trying out tomorrow so that will be interesting to see if it’s a hit or if it’s a disaster.
