Hetty’s Blueberry muffins

Hey everyone!

This weekend I had a really bad headace and spent most of Friday afternoon and Saturday in bed. But luckily my headace was so so much better on Sunday. So on that note I’m kicking of the week with some baked goods. Blueberry muffins to kick start any day is a good way to go. I was supposed to bake them yesterday because Sunday is always a typical baking day at our house, but I was too cought up in work to even think about baking, so I thought today would be a great day for blueberry muffins! I hope y’all love the recipe as much as we do! Kick some ass this week, be the amazing person you are, work hard and together we can change the world.

Ingredients:

3 eggs

100 g butter

1 ts baking powder

0,5 dl milk

150 g plain flour

150 g Sugar ( + 2 dl of sugar for the blueberries. )

150-200 g blueberries

How to make Hetty’s Home made Blueberry muffins:

  1. Start by pre-heating the oven to 350 degrees.  Then mix together the butter and sugar. (use a blender, if you have one.)  Mix inn the eggs, one at a time. add the flour and baking powder before adding inn the milk. mix it all well together.
  2. Wash the blueberries and put them into a mixing bowl. Add 2dl of sugar until the berries are sweet. ( Do not add all 2 dl of sugar at once, taste them to see if they need more or less amount of sugar.) Then add the blueberries into the muffin mix and gently mix them together with wooden spoon.
  3. fill up the baking cups or the muffin cups with 3/4 full ish. I tend to use two table spoons too place the muffin mix into the baking cups/muffin cups. Put them into the oven, and let them bake for  approximately 20 minutes.
