Hey everyone! Today it’s not only monday but it’s also a new month, a new week and a new day! I’m more dedicated than ever an I really feel like a better version of myself. As many of you know I have super tight food budget, welll a very tight budget in generall actually. But that means I have to think smart and plan most of the meals for a month. It’s a lot of sausage og chicken because that’s super cheap and I manage to get dinner on the table every night for a month. Some would say don’t you get tired of eating the same components all the time? The answer to that question is no, becuase I’m so gratful that I in fact get a hot meal on the table every day, and I always think of new ways to cook the ingredeints I have. Creating new reicpes, trying out old recipes, improving recipes, it’s all about what you make out of what you got and it’s all about perspectiv, how you look at your situation, or any situation in generall actually. Today I’m making Mac’N’cheese with smoked sausage served with stirfry vegetables on the side.
4 Smoked skinn-free sausages
1 Red onion
1 L Milk
Red chili flakes
Stake seaosning mix
2 Handfulls of Grated cheese
250 g sliced cheese
How to make Hetty’s Macaroni and cheese caserike with smoked sausage:
- Preheat the oven to 200 degrees C. Cook the macaroni as written on the label. Cut the sausages in two length wise, then again length wise before slicing it up. Peel and finely chopp up the onioen, Add the sausage and the onion into a frying pan with some butter, season with salt and pepper. Let the sauges cook until it’s reached a sting crust.
- Make the sause, add abour two tablespoons og butter into a large sauce pan. When the butter has melted add inn some flour,, until it gets lumpy but yet smooth consistancy. Add inn some of milk, stir all the time so that the lumps disapear and the sauce doesn’t burn.When the sauce get’s thicker, add in the rest of the milk a little by little. Season with salt, pepper, red chili flakes, stake seasoning, and add inn the grated cheese. Stir in the sauce constantly so it does’t burn. When the sauce reach boiling point, it’s done. Put it aside for now.
- When the macaroni is done, drain the water and put the macaroini back into the saucepan, add inn the cooked sasuage, then the sauce. Mix it all well together. Spray a casserole dish with a non-stick spray and add inn the filling. Cover the dish up with slices of cheese and put it into the oven for aproxomently 20 minutes or until the cheese gets a good crispy look and the cheese is melted.
You can easily serve this dish with a salad on the side or maybe some stir fry vegetables to get a more completed meal out of it if you want to.
